Veggie Voyageur Burger Recipe

Ingredients:
For the Veggie Burger Patties:
- 2 cups cooked and drained black beans (canned or cooked from dried beans)
- 1 cup cooked quinoa (white or red)
- 1/2 cup grated carrot
- 1/2 cup finely chopped bell peppers (red, green, or yellow)
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro or parsley
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup breadcrumbs (adjust as needed)

- 4 whole-grain burger buns
- Lettuce leaves
- Sliced tomato
- Sliced red onion
- Sliced avocado
- Sliced pickles

Instructions:
Prepare the Veggie Burger Patties:
- In a large mixing bowl, add the cooked black beans and cooked quinoa. Mash the black beans with a fork or potato masher until they are mostly mashed, with some chunks remaining.
- Add the grated carrot, chopped bell peppers, red onion, minced garlic, chopped cilantro or parsley, ground cumin, paprika, salt, and black pepper to the bowl.
- Mix all the ingredients together until well combined.
- Add breadcrumbs gradually and mix until the mixture is firm enough to shape into patties. You may not need all the breadcrumbs, so adjust as needed.

- Divide the veggie mixture into 4 equal portions.
- With your hands, shape each portion into a patty that is about the same size as your burger buns.
- Place the patties on a baking sheet lined with parchment paper.
