Spicy Chili Con Queso

This is also great as a dip for tortilla chips.

INGREDIENTS

MAKES 4 CUPS

  • tablespoons unsalted butter
  • large onion, chopped
  • cups drained canned peeled tomatoes, chopped and drained well again
  • cup canned black beans, rinsed and well drained
  • ounces extra-sharp cheddar cheese, diced
  • 1 teaspoon chipotle chile powder ½ teaspoon ground cumin

INSTRUCTION

  • In a large saucepan, melt the butter over medium heat.
  • Add the onion and cook, stirring, until softened, 5 to 7 minutes.
  • Stir in the tomatoes, beans, cheese, chipotle powder, and cumin, stirring constantly until the cheese is completely melted.
  • Serve immediately.

NOTE: Make sure to drain the tomatoes well, or the chili will be runny.
