Ingredients:

For the Burger Patties:

  • 5 pounds ground beef (80% lean)
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Southwest Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon adobo sauce (from a can of chipotle peppers in adobo)
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For Assembling:

  • 4 burger buns
  • 4 slices of pepper jack cheese
  • 1 cup shredded lettuce
  • 1 cup sliced tomatoes
  • 1/2 cup sliced red onion
  • Sliced jalapeños (optional for extra heat)

Instructions:

    Prepare the Burger Patties:

  1. In a large mixing bowl, combine the ground beef, chopped red onion, chopped cilantro, ground cumin, chili powder, smoked paprika, salt, and pepper.
  2. Mix the ingredients together until well combined, but avoid overmixing to keep the patties tender.
  3. Divide the mixture into 4 equal portions and shape them into burger patties.
