Smoked Trout Burgers with Horseradish and Ricotta

These crowd-pleasing patties are our take on a New York deli favorite: smoked trout with red onion and horseradish.

We’ve added ricotta cheese and topped them with green apple for a subtle creamy sweetness.

These burgers are perfect if you’re crunched for time because they need no cooking.

We especially love them for Sunday brunch.

Ingredients

MAKES 6 BURGERS

  • 1 pound smoked trout, cut into small chunks
  • 2 tablespoons prepared horseradish
  • 1 cup ricotta cheese (fat-free works well)

Instructions

  • Put the trout, horseradish, and ricotta in a food processor and pulse just to combine.
  • Transfer to a medium-size mixing bowl and continue to mix until all the ingredients are well blended.
  • Form into 6 patties, each ½ inch thick.
