Salmon Burgers in Grape Leaves
Grape leaves soaked in brine make wonderfully flavored wrappings for a variety of fillings, from fish (as in this salmon burger) to goat cheese. After grilling, wrap three salmon packets in a piece of lavash to make a hearty sandwich.
Ingredients
MAKES 24 PACKETS, OR 8 SERVINGS
- 1 pound salmon fillets, skin and any bones removed ¼ cup minced shallots or red onion
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce ¼ cup olive oil
- 24 grape leaves in brine, drained and patted dry ½ lemon
Instructions
- Finely chop the salmon by hand; a food processor will ruin the texture.
- Place in a medium-size bowl and add the shallots and mustard. Mix well.
- In a small bowl, whisk together the soy sauce and olive oil.
- Place 1 tablespoon of the fish mixture in the middle of a grape leaf and fold over as you would a burrito.
- Repeat with the remaining filling and leaves.
- Use a pastry brush to coat each packet with the soy-oil mixture.
- Lightly oil the grill or a skillet over medium-high heat and cook the packets, squeezing the lemon over them, until slightly crispy, 5 to 7 minutes per side.
