Range Buffalo Burgers
Buffalo has a rich and robust taste—like beef, but with significantly less fat.
Because it contains less fat than beef, buffalo also cooks a lot faster and is best when cooked medium rare. Overcooking will ruin its sweet juiciness and produce a dry, flavorless burger.
Top it with the heavenly Brooklyn Ketchup— generously contributed by cookbook author and radio personality Arthur Schwartz, whose show, Food Talk, airs on WOR 710 AM radio in New York City.
Ingredients
MAKES 4 BURGERS
- 1 pound ground buffalo meat
- 1 clove garlic, minced
- 1 tablespoon ketchup
- 1teaspoon Worcestershire sauce
- ½ teaspoon salt
- 1 teaspoon coarsely ground black pepper
Instructions
- In a medium-size mixing bowl, gently mix together all the ingredients.
- Form into 4 patties, each ¾ inch thick.
- Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, 1½ to 2 minutes per side for medium rare.
