Portobello Swiss Supreme Burger Recipe

The Portobello Swiss Supreme Burger is a delightful vegetarian burger option that features the meaty richness of Portobello mushrooms and the creaminess of Swiss cheese. Here’s a recipe for you to enjoy:

Ingredients:

For the Portobello Mushroom Caps:

  • 4 large Portobello mushroom caps, stems removed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • Balsamic vinegar for drizzling (optional)

For the Burger Patties:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 egg
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

For Assembling:

  • 4 hamburger buns
  • 4 slices Swiss cheese
  • Lettuce leaves
  • Sliced tomato
  • Sliced red onion
  • Dijon mustard
  • Mayonnaise or aioli (optional)

Instructions:

    Prepare the Portobello Mushroom Caps:

  1. Preheat your grill or a skillet over medium-high heat.
  2. In a small bowl, mix the olive oil, minced garlic, salt, and black pepper.
  3. Brush both sides of each Portobello mushroom cap with the olive oil mixture.
  4. Grill the mushroom caps for about 4-5 minutes per side, or until they are tender and have grill marks.
  5. If desired, drizzle with a bit of balsamic vinegar for added flavor. Set the mushroom caps aside.

    Prepare the Burger Patties:

  1. In a food processor, combine the chickpeas, breadcrumbs, grated Parmesan cheese (if using), egg, dried oregano, salt, and black pepper.
  2. Pulse until the mixture comes together but still has some texture.
  3. Divide the mixture into 4 equal portions and shape them into burger patties.

    Cook the Burger Patties:

  1. Preheat your grill or a skillet over medium-high heat.
  2. If using a grill, lightly oil the grates to prevent sticking.
  3. Grill the chickpea patties for about 4-5 minutes per side, or until they are heated through and have grill marks.
  4. During the last minute of cooking, place a slice of Swiss cheese on each patty and cover the grill to melt the cheese.

    Assemble the Portobello Swiss Supreme Burgers:

  1. While the patties are cooking, lightly toast the hamburger buns on the grill or in a toaster.
  2. Spread Dijon mustard and mayonnaise or aioli (if desired) on the inside of each bun.
