Pampas Burger with Chimichurri Sauce
Argentina produces some of the world’s best beef, and that’s the inspiration behind this simple grilled burger.
It’s paired with Chimichurri Sauce, a garlicky condiment commonly used as a meat and fish accompaniment throughout Latin America.
We’ve added red bell peppers and olives to the sauce for a particularly Argentine accent.
INGREDIENTS
MAKES 4 BURGERS
- 1 pound ground beef sirloin
- 1 medium-size green bell pepper, seeded and finely diced
- 1 teaspoon salt
- 1 teaspoon coarsely ground black pepper
INSTRUCTION
- In a medium-size mixing bowl, gently mix together all the ingredients and form into 4 patties, each ½ inch thick.
- Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, 5 to 6 minutes per side for medium rare.
Chimichurri Sauce
INGREDIENTS
MAKES ¾ CUP
- 2 cloves garlic, peeled
- 1 bunch fresh flat-leaf parsley leaves ½ cup olive oil
- ¼ cup distilled white vinegar
- ¼ teaspoon coarsely ground black pepper ½ teaspoon red pepper flakes
- teaspoon dried oregano
- ¼ cup chopped pitted black olives
- ½ medium-size red bell pepper, seeded and finely diced
INSTRUCTION
- Pulse the garlic and parsley together in a food processor until finely chopped.
- Add the oil, vinegar, black pepper, red pepper flakes, oregano, and olives and pulse until well combined but not smooth.
- Stir in the bell pepper.
- Taste and adjust the seasonings.
