Pampas Burger with Chimichurri Sauce

Argentina produces some of the world’s best beef, and that’s the inspiration behind this simple grilled burger.

It’s paired with Chimichurri Sauce, a garlicky condiment commonly used as a meat and fish accompaniment throughout Latin America.

We’ve added red bell peppers and olives to the sauce for a particularly Argentine accent.

INGREDIENTS

MAKES 4 BURGERS

  • 1 pound ground beef sirloin
  • 1 medium-size green bell pepper, seeded and finely diced
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper

INSTRUCTION

  • In a medium-size mixing bowl, gently mix together all the ingredients and form into 4 patties, each ½ inch thick.
  • Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, 5 to 6 minutes per side for medium rare.

Chimichurri Sauce

INGREDIENTS

MAKES ¾ CUP

  • 2 cloves garlic, peeled
  • 1 bunch fresh flat-leaf parsley leaves ½ cup olive oil
  • ¼ cup distilled white vinegar
  • ¼ teaspoon coarsely ground black pepper ½ teaspoon red pepper flakes
  • teaspoon dried oregano
  • ¼ cup chopped pitted black olives
  • ½ medium-size red bell pepper, seeded and finely diced

INSTRUCTION

  • Pulse the garlic and parsley together in a food processor until finely chopped.
  • Add the oil, vinegar, black pepper, red pepper flakes, oregano, and olives and pulse until well combined but not smooth.
  • Stir in the bell pepper.
  • Taste and adjust the seasonings.
