Ingredients:

For the Chickpea Burger Patties:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped roasted red pepper (from a jar)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander

For the Yogurt Sauce:

  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice

  • 1 tablespoon fresh mint, finely chopped

  • 4 hamburger buns
  • Lettuce leaves
  • Sliced tomatoes

  • Kalamata olives

Instructions:

    Prepare the Chickpea Burger Patties:

  2. Pulse the mixture until it forms a coarse paste, with some small chunks of chickpeas remaining.
