Kofte Kebab Burgers
To the Arab world, kofte means “ground meat”—usually lamb—that is molded into flat cigar shapes and grilled on skewers.
The garlicky Cucumber Mint Sauce doubles as a delicious salad dressing.
Ingredients
MAKES 8 KEBABS, OR 4 SERVINGS
- 1 pound ground lamb
- 1 pound ground beef chuck
- 1large onion, minced
- ¾ cup finely chopped fresh flat-leaf parsley leaves
- 1 clove garlic, minced
- 1teaspoon ground cumin
- 1 teaspoon chili powder 1½ teaspoons salt
- 1teaspoon coarsely ground black pepper
Instructions
- Combine all the ingredients in a large mixing bowl.
- Knead thoroughly for several minutes, squeezing the mixture through your fingers.
- You want a smooth texture.
- Mold the mixture into 8 flat sausage shapes, each about 5 inches long and 2 inches wide.
- Lightly oil the grill or a skillet over high heat and cook the kebabs until browned, 3 to 4 minutes per side.
