Japanese Rice Burgers with Chicken Teriyaki

Even die-hard classic burger fans have been converted by the famous MOS burger of Japan.

It became an instant hit when the Japanese fast-food chain MOS introduced it.

What is a MOS burger? It’s a burger whose buns have been replaced with rice patties.

The filling can be chicken, shrimp, vegetable, or beef, all slathered generously with teriyaki sauce.

It’s now one of the top sellers in Japan and across Asia. Here’s our version.

Ingredients

MAKES 2 BURGERS

  • 1 cup panko or plain dry bread crumbs
  • 1 teaspoon monosodium glutamate (MSG)
  • 4-to 6-ounce chicken cutlets, trimmed of fat and skin and pounded
  • ¼ inch thick 2 tablespoons canola oil
  • 2 cups warm cooked short-grain white rice (see Note)

Instructions

  • Combine the panko and MSG in a shallow bowl.
  • Coat the cutlets evenly on both sides with the bread crumb mixture, tapping off any excess.
  • In a large nonstick skillet, heat 1 tablespoon of the oil over medium-high heat.
  • Pan-fry the chicken cutlets until just cooked all the way through, 2 to 4 minutes per side.
  • Remove from the heat and set aside.
  • To make the rice patties, take about ½ cup of the cooked rice and press it very tightly between the palms of your hands to make a patty ¾ inch thick.
  • Make 4 patties.
  • Heat the remaining 1 tablespoon oil in a large nonstick skillet over medium-high heat.
  • Pan-fry the rice patties until both sides are lightly golden, 1 to 3 minutes per side. Remove from the heat.
