Jamaican-Spiced Ostrich Burgers
Ostrich is technically considered poultry, but it’s cooked like venison, a lean red meat.
Ostrich meat is beefy tasting, but it’s also very lean and high in iron, and it contains half the calories of beef.
These burgers will be darker in color than beef, and because ostrich contains very little fat, you must watch the cooking time very carefully, or you’ll end up with dry, tough burgers.
Ingredients
MAKES 4 BURGERS
- 1 pound ground ostrich meat
- 1 clove garlic, minced
- 1½ tablespoons olive oil
- 1½ teaspoons salt
- teaspoon coarsely ground black pepper
- 1 tablespoon onion powder 1½ teaspoons sugar
- 1 teaspoon dried thyme
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper Pinch of ground ginger
Instructions
- In a medium-size mixing bowl, gently combine all the ingredients.
- Form into 4 patties, each ¾ inch thick.
- Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, 3 to 5 minutes per side for medium rare.
