Grilled Maple Mustard Pork Burgers

Call this the quintessential North American burger, since maple trees are found only in North America. Its honeyed richness makes this burger great cooked in a grill pan but spectacular when barbecued.

Ingredients

MAKES 4 BURGERS

  • 1 pound fresh lightly seasoned pork sausage, casings removed
  • 1 small onion, chopped
  • 2 cloves garlic, minced ½ teaspoon salt
  • ¼ teaspoon coarsely ground black pepper 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon cider vinegar ½ teaspoon dry mustard
  • ½ teaspoon grated orange zest ½ teaspoon curry powder

Instructions

  1. In a medium-size mixing bowl, mix together the sausage, onion, garlic, salt, and pepper until well combined.
  2. Shape into 4 patties, each ½ inch thick.
  3. In a small bowl, whisk together the maple syrup, Dijon mustard, vinegar, dry mustard, orange zest, and curry powder.
  4. Reserve half of this mixture for topping.
  5. Lightly oil the grill or a skillet over medium-high heat and cook the burgers for 5 minutes.
  6. Flip the burgers, baste with the maple syrup mixture, and cook until cooked through, about 5 minutes more.
