Grilled Maple Mustard Pork Burgers
Call this the quintessential North American burger, since maple trees are found only in North America. Its honeyed richness makes this burger great cooked in a grill pan but spectacular when barbecued.
Ingredients
MAKES 4 BURGERS
- 1 pound fresh lightly seasoned pork sausage, casings removed
- 1 small onion, chopped
- 2 cloves garlic, minced ½ teaspoon salt
- ¼ teaspoon coarsely ground black pepper 3 tablespoons pure maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon cider vinegar ½ teaspoon dry mustard
- ½ teaspoon grated orange zest ½ teaspoon curry powder
Instructions
- In a medium-size mixing bowl, mix together the sausage, onion, garlic, salt, and pepper until well combined.
- Shape into 4 patties, each ½ inch thick.
- In a small bowl, whisk together the maple syrup, Dijon mustard, vinegar, dry mustard, orange zest, and curry powder.
- Reserve half of this mixture for topping.
- Lightly oil the grill or a skillet over medium-high heat and cook the burgers for 5 minutes.
- Flip the burgers, baste with the maple syrup mixture, and cook until cooked through, about 5 minutes more.
