Cumin-Scented Burgers with Orange Chipotle Sauce

Lavash is the oldest known bread in the Middle East. It’s flat and unleavened, often dried and served as crispy crackers. It’s perhaps most recognizable as the packaging for roll-up sand wiches.

We think it’s the perfect wrap for this savory burger. Here the exotic mixture of cumin and orange conjures up Morocco.

But you don’t need to travel that far for special ingredients. A short trip to your local supermarket will do.

Ingredients

MAKES 6 BURGERS

  • pounds ground turkey
  • teaspoon ground cumin
  • ¼ cup finely chopped orange zest (from about 1 large orange)
  • 1 cup tightly packed fresh flat-leaf parsley leaves, finely chopped 1 cup chicken broth

Instructions

Place all the ingredients in a large mixing bowl and thoroughly combine, using your hands. Form into 6 patties, each 1 inch thick.

Lightly oil the grill or a skillet over medium-high heat. (These also can be broiled.) Cook to the desired degree of doneness, at least medium, about 4 minutes per side.

Orange Chipotle Sauce

Try this at Thanksgiving. It’s heavenly with roast turkey.

MAKES 1 CUP

  • 1 canned chipotle chile peppers in adobo sauce with 1 teaspoon of the sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon minced red onion ¼ cup orange juice
  • ¼ cup orange marmalade
  • Place all the ingredients in a food processor and process until smooth.
