Bulgarian Burgers
Steven Raichlen, author of The Barbecue! Bible and numerous other cookbooks, is the undisputed king of barbecue.
Steven is so passionate about it that he even teaches a “Barbecue University” course in West Virginia.
Steven says that Bulgarian burgers, which appear in The Barbecue! Bible, are one of his favorites. They’re one of ours, too.
INGREDIENTS
MAKES 4 BURGERS
- 2 ounces ground veal
- 2 ounces ground pork
- 1 small onion, minced
- 2 tablespoons minced fresh flat-leaf parsley leaves
- 1 teaspoon salt, or more to taste
Generous ½ teaspoon ground cumin, or more to taste ½ teaspoon coarsely ground black pepper, or more to taste

- Combine all the ingredients in a large mixing bowl and gently mix with a wooden spoon.
- Test the mixture for seasoning by sautéing a tiny portion in a nonstick skillet until cooked through.
- Taste and adjust the seasonings; the mixture should be highly seasoned.
- Divide the meat into 4 equal portions. Lightly wet your hands with cold water then form each portion into a patty about ¾ inch thick.
- Lightly oil the grill or a skillet over high heat and cook the burgers to the desired degree of doneness, 4 to 5 minutes per side for medium.
