Bluefish Burgers with Roasted Yellow Pepper Sauce
Bluefish get around. They’re found all over the place—from Maine to Florida, in the coastal waters off Africa, and in parts of Europe, Malaysia, and Australia.
And they’ve found their way here in a satisfying burger with a touch of mustard and topped with a mellow roasted pepper sauce. You can substitute grouper or pollock, if you wish.
Ingredients
MAKES 4 BURGERS
- 1 lemon, halved
- 1 pound bluefish fillets
- 1 large egg
- 2 tablespoons plain yogurt
- 1 tablespoon Dijon mustard
- 2 scallions (white and green parts), finely chopped
- 2 teaspoons vegetable oil
Instructions
- Squeeze 1 lemon half over the fish and broil until tender, 2 to 4 minutes.
- Remove from the oven and squeeze the remaining lemon half over the fish.
- Remove the skin and put the meat in a large mixing bowl. M
- ash with a fork into fine bits.
- Add the egg, yogurt, mustard, and scallions and mix thoroughly.
- To make the burgers, pack one-quarter of the mixture into a ½-cup measure and place the patty on a baking sheet.
- Repeat with the remaining mixture.
- Cover with plastic wrap and refrigerate for at least 1 hour to firm up.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the burgers and pan-fry until cooked through and a light crust forms on both sides, 2 to 4 minutes per side.
