Salisbury Steak Burger

Chopped meat—with a dash of horseradish, mustard, or Worcestershire sauce. So enjoy this in good health!

INGREDIENTS

MAKES 4 BURGERS

  • 1 pound ground beef sirloin ½ cup plain dry bread crumbs
  • 1 medium-size onion, finely chopped
  • cloves garlic, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
  • tablespoon canola oil
  • tablespoons cornstarch
  • cups beef broth
  • ounces white mushrooms, sliced ¼ cup ketchup
  • tablespoons Worcestershire sauce
  • 1 teaspoon dry mustard

INSTRUCTION

  • In a medium-size mixing bowl, gently mix together the beef, bread crumbs, half of the onion, the garlic, egg, salt, and pepper.
  • Form into 4 patties, each ¾ inch thick.
  • Heat the oil in a large skillet over medium-high heat.
  • Sauté the burgers until just cooked through, 3 to 5 minutes per side.
  • Remove from the pan and set aside.
  • Reserve the pan drippings.
  • In a small bowl, mix the cornstarch with 1 cup of the beef broth to make slurry.
  • To the reserved drippings in the pan, add the remaining onion and the mushrooms and cook, stirring, over medium-high heat until just softened, about 2 minutes, scraping the browned bits off the bottom of the pan.
  • Add the remaining 1 cup broth, the ketchup, Worcestershire, and mustard.
  • Whisk in the slurry and bring to a boil for 1 minute.
  • Reduce the heat to low, return the burgers to the pan, and simmer for 3 to 5 minutes.
