Veggie Voyageur Burger Recipe

The Veggie Voyageur Burger is a delicious and satisfying vegetarian burger made with a variety of vegetables and spices. Here’s a recipe for you to enjoy:

Ingredients:

For the Veggie Burger Patties:

  • 2 cups cooked and drained black beans (canned or cooked from dried beans)
  • 1 cup cooked quinoa (white or red)
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped bell peppers (red, green, or yellow)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro or parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs (adjust as needed)

For Assembling:

  • 4 whole-grain burger buns
  • Lettuce leaves
  • Sliced tomato
  • Sliced red onion
  • Sliced avocado
  • Sliced pickles
  • Mayonnaise, ketchup, or your favorite condiments

Instructions:

    Prepare the Veggie Burger Patties:

  1. In a large mixing bowl, add the cooked black beans and cooked quinoa. Mash the black beans with a fork or potato masher until they are mostly mashed, with some chunks remaining.
  2. Add the grated carrot, chopped bell peppers, red onion, minced garlic, chopped cilantro or parsley, ground cumin, paprika, salt, and black pepper to the bowl.
  3. Mix all the ingredients together until well combined.
  4. Add breadcrumbs gradually and mix until the mixture is firm enough to shape into patties. You may not need all the breadcrumbs, so adjust as needed.

    Shape the Veggie Burger Patties:

  1. Divide the veggie mixture into 4 equal portions.
  2. With your hands, shape each portion into a patty that is about the same size as your burger buns.
  3. Place the patties on a baking sheet lined with parchment paper.

    Cook the Veggie Burger Patties:

  1. You can cook the patties in a skillet on the stovetop or on a grill.
  2. If using a skillet, heat a bit of oil over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they are browned and heated through.
  3. If using a grill, lightly oil the grates and grill the patties for about 4-5 minutes on each side until they have grill marks and are heated through.

    Assemble the Veggie Voyageur Burgers:

  1. While the patties are cooking, lightly toast the burger buns on the grill or in a toaster.
  2. Spread your favorite condiments (mayonnaise, ketchup, etc.) on the inside of each bun.
  3. Place a lettuce leaf on the bottom half of each bun.
  4. Add a cooked veggie patty on the lettuce.
  5. Top the patty with sliced tomato, red onion, avocado, and pickles.
  6. Place the other half of the bun on top.
