Korean Bulgogi Burger

Korean bulgogi gets our vote as one of the world’s best barbecued meats.

Thin slices of sirloin are marinated in a sweet soy sauce mixture and then grilled.

The result is barbecued beef that is at once crisp and tender, sweet, salty, and spicy.

We predict this burgerized version will become one of your favorites.

INGREDIENTS

MAKES 4 BURGERS

  • pound ground beef sirloin
  • ¾cup grated onion
  • tablespoon plus 1 teaspoon sugar
  • 3tablespoons soy sauce
  • ½ teaspoon coarsely ground black pepper 1½ teaspoons toasted sesame oil
  • tablespoon plus 2 teaspoons dry sherry
  • 2cloves garlic, minced

INSTRUCTION

  • In a medium-size mixing bowl, gently mix together the beef, ½ cup of the onion, 1 teaspoon of the sugar, 1 tablespoon of the soy sauce, the pepper, 1 teaspoon of the sesame oil, 1 tablespoon of the sherry, and half of the garlic.
  • Form into 4 patties, each ¾ inch thick.
  • In a small bowl, mix together the remaining ¼ cup onion, 1 tablespoon sugar, 2 tablespoons soy sauce, ½ teaspoon sesame oil, 2 teaspoons sherry, and garlic. Set aside for topping.
  • Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, 3 to 5 minutes per side for medium rare.
