Hellenic Lamb Burgers

Rich with thyme and oregano, this burger embodies classic Greek flavors. But it’s the sweet-and-sour grilled eggplant salad topping that makes this a killer burger. Try the salad as a side dish on its own.

Ingredients

MAKES 4 BURGERS

  • 1 pound ground lamb
  • medium-size onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh oregano leaves
  • 2 tablespoons chopped fresh thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper

Instructions

  • Thoroughly knead all the ingredients together in a large mixing bowl until smooth, about 5 minutes.
  • Form into 4 patties, each ½ inch thick.
  • Lightly oil the grill or a skillet over medium heat and cook the burgers to the desired degree of doneness, about 5 minutes per side for medium.
