Spicy Tofu and Pork Burgers

This may be the only burger in the book that is actually steamed. Don’t wrinkle your nose! It’s very tasty, thanks to the spicy chili garlic sauce, which will most certainly clear your sinuses, if you dare swallow a spoonful. We don’t suggest it.

Ingredients

MAKES 6 BURGERS

  • 1 pound ground pork
  • teaspoons Asian chili garlic sauce ¾ teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon cornstarch
  • 12-ounce package firm tofu, drained
  • large egg, lightly beaten
  • ¼ teaspoon ground white pepper
  • ½ teaspoon toasted sesame oil
  • scallion (white and green parts), minced

Instructions

  • In a large mixing bowl, combine the pork, chili garlic sauce, ¼ teaspoon of the salt, ¼ teaspoon of the sugar, and the cornstarch. Set aside.
  • Mash the tofu in a large bowl, then place it in a double thickness of cheesecloth or a clean kitchen towel.
  • Twist the ends together and squeeze out as much water as possible.
  • Repeat twice. Scoop the tofu out into a medium-size mixing bowl and add the remaining ½ teaspoon salt, ¼ teaspoon sugar, the egg, white pepper, sesame oil, and scallion.
  • Mix well, then add to the pork mixture and mix again.
  • Form into 6 patties, each 1 inch thick.
  • In a steamer, steam the burgers until cooked all the way through, 7 to 10 minutes.
  • Remove from the steamer and serve immediately.
